Cup cake basic

Most basic, easy and quick recipe to make on a lazy Sunday afternoon.

Ingredients

  • 50g self raising flour
  • 50g butter
  • 50g caster sugar
  • 1 egg
  • 1.5 tbsp vanilla extract
The important thing is ratio. If you want more just multiply the quantities in same ratio.

Steps

  1. Mix butter and sugar and in a large bowl. Use a manual or electric whisk to beat it well.
  2. Break the eggs into a small bowl separately  and beat it well. Add the vanilla extract and mix well.
  3. Pour the egg mixture into the large bowl of butter and sugar mixture and stir it a bit.
  4. Now add the flour, run it through a sieve to remove lumps.
  5. Fold the flour well with the rest of the contents, it's important not to use any electric beater at this stage.
  6. Preheat the oven for a few minutes.
  7. Grease the cake tin/cup cake tray well. Now pour batter into the tin and shake a bit to remove any air bubbles/gaps.
  8. Bake at 180 degrees for around 20 minutes.
Now enjoy your cup cake with a hot cuppa.
